Halfway Mark!

This post is a little over due but o well! Better late than never!




Only 20 more weeks! I can't believe I am halfway, and yet I feel like I still have a long time until I get to hold my baby girl in my arms. At this point I haven't been the best at tracking things while being pregnant, or taking pictures, which I already regret.

So here I am going to take pictures every week. I am thinking Sundays will be the best since I get to dress up. Since I work at the Botanical Gardens I just wear t-shirts (Mostly Spencer's now) and my one pair of maternity jeans that I absolutely love. People have told me to just wear my normal jeans and either get a belly band, or rubber band, but maternity jeans are way more comfortable. As a side note, I tried to wear a normal pair of jeans, that I could fit into last week, but the button popped off right before I was headed out the door. So back to my maternity jeans I went. I was kinda sad and wanted to cry, but I laughed really hard instead and realized this is just all part of being pregnant. A belly that gets bigger every week.



So here is a super cute outfit, I LOVE THE PANTS THE MOST, that my mommy bought for me. I was so excited to wear them and I couldn't until today since I don't work Fridays and can dress up. YAY for being fashionable while pregnant and a fashionable mommy who knows whats in style! She sent me a wonderful Easter package of clothes that I desperately needed. I cannot wait to wear my super cute Easter dress next Sunday. I can't believe that Easter is next week! Time just flies by. Which means that I only have six more weeks of seminary. The kids have their spring break second week of April so that is going to be a much needed break. Still trying to get my feet under me after my partner was called into the Stake Presidency a few weeks ago. I am so grateful for having this calling, but it is probably one of the hardest callings you can have in the church.


Anyways, I feel the baby kick more and more. It makes me smile every time I feel her. Spencer has yet to feel it, but I am thinking it will be sometime in the next week or so. Usually she is more active during the day when we are apart, so I'm hoping this weekend will be a good time to feel her. Sometimes at work I just sit there for a while with my hand on my tummy, hoping no one walks by to see me with my hand in my pants since she kicks right on the waistline of them, and feel her kick a lot. Other times nothing, but we get to she her really well in our first sonogram on Monday. I am very excited for that.

Things I have to complain about being pregnant is a very short list. I have had an extremely easy and comfortable pregnancy, I haven't gotten morning sickness, just tired first trimester. I get more winded/tired easily, but still have more energy now then my first three months. The only bad thing that has really happened the whole time is I have been breaking out everywhere. This has been no fun and I wish I would go away before summer, crossing my fingers. The other more recent is I can tell that my hands and feet/ankles are starting to swell a bit. My heels are tighter and leave an indention all over my foot or cannot wear some of them at all, and not sure how much longer I can wear my wedding ring. Especially now as it starts to warm up. But those things are really nothing to complain about. I am so happy with everything and I am loving every day. Spencer has been so kind and sweet to me, really stepping up to help around the house and cook and clean. I am so grateful to have him in my life and to share this magical experience together.

It's a GIRL!

This is me 18 weeks prego!

I'm pretty sure everyone knows by now, but yes Spencer and I are having a girl. I (WE) could not be more thrilled to welcome her in August into our home. We don't have a name yet, but we do have some that we are thinking about. I will not tell you until she is born, but it's going to be a beautiful name no matter what. So last Monday was our check up. Of course our little girl was stubborn, hence being a girl, and wouldn't change positions to really get a good look to see the gender. It was obvious once the lady pointed it out and told us if it was a boy, there would be something sticking out. There was nothing, and you could see two lines, indicating a baby GIRL! I am over the moon excited and already have fun plans for her nursery. Of course they are only plans, since we are poor and can't do/get anything right now. Plus We are still waiting to see what is going to happen with Spencer this summer. Right now it's a toss up of Atlanta, or Colorado. I personally want to stay in Atlanta just so it will be easier with health insurance and not finding a new doctor. Plus if we go to CO, I will probably end up having the baby there with my due date so close to us leaving. There is no way I will be able to drive or fly back to ATL during those months. In the end, we will be happy wherever Spencer lands a job/internship. So please keep us in your prayers because we still have not heard back good new from anybody.





I got a fun package in the mail tonight from Mimi, already spoiling our little girl which I am okay with since that is what grandparents are for right? That day I called to tell her, she went out and bought her some outfits. One for leaving the hospital, one for church and a fun outing dress, and some adorable onesies with matching socks that range from 0-3m and 6-9m. Here are here clothes all together of what we have so far. I just love little girl clothes. Of course most of it is from Mimi and Grandma Malley! Grandma Malley already gave me some things before I was even pregnant the green zebra bodysuit and the one with the butterfly on the bum, and at Christmas time the cute dress, She told me she just pictured a mini Kaitlin in it when she saw it, once we told our families that we were expecting! Thank you both very very very much! Everything we have so far is darling and I can't wait to get more. Spencer today was like alright we are totally set. OF course I gave him a look like are you cray cray man because we needs tons more. Plus she is a girl so she needs lots of clothes. Now I need to start making hair bows to go with her outfits!






Of course I bought these for Spencer way back. They were on sale and they are perfect for us. This is how I told him, well kinda, that we were expecting. Of course I told Spencer that morning, but that night I wrapped some presents (it was almost Christmas) and he opened them all excited. I then told him even if we are having a girl, she can still wear them. I need to make sure she wears a cute bow so everyone knows shes a girl! Spencer obviously thinks this is the most important and coolest outfit for her, but I know I already have/ will get plenty more outfits that are more darling as time goes by. As you can tell, I am so excited to be having a girl and I cannot wait to get more clothes, nursery things, and do my crafts for her! Yay for girls!

New Straightener Help!

So last weekend, Spencer and I went to Washington D.C. for a J. Reuben Clark Law Society Conference. It was fun, and very tiring. WE really didn't have much time to do all the touristy stuff and we didn't even get to do a US Capitol tour. Which I am so bummed about, but we might go back for his spring break. Not quite sure. We were so busy with conference things all weekend, although we did get to go to the Air and Space museum, see the Washington monument and capitol. I also got to go to the Newsmuseum, which was awesome, and wished I had more time to spend there. We got to spend time with my sister, Amy and her fun family. I haven't seen them in 3 years, so it was worth it. I also go to see one my of all time best friend MEGHAN, and her new hubby Joey. That was way way way too short, only like for 2 hours, cause we had to drive back to GA. All in all, it was a wonderful weekend, and a great way for Spencer to learn more about internship process and put his name out there for help to get a job! Anyways back to my hair straightener crisis. I just bought one off of zulily for about $75. I am so mad and upset that it broke. I need a new one again now. I was planning on using this one for about 3 or 4 more years, but I guess I really didn't get that great of a one. IT was a T3 single pass, although it really wasn't a single pass. I really didn't like it that much, but it worked better than my old one that hardly gets hot now and I was pleased to use it for those next years until I could get a nice one. Well now I don't know which straightener to get. I found mine broken in two, I don't know how it happened, but I think someone stepped on it and it broke. I guess that is what I get when its basically plastic, like I said not the best one I've had. So I have used my friends CHI before and have always loved it and thought about getting one myself. There are more out there now that have great reviews as well like the HAI, SEDU, and the GHD? So which one do u prefer, and have you used any of the others ones to really now which is better. I have looked at so many reviews, I cannot think straight and tell which is better. I am thinking I should stick with the CHI, but if there is one better out there, PLEASE HELP ME!

Feeling bigger!

Everyday, after I eat, especially by the end of the day, I feel really big! When I wake up, I don't really feel it or see it too much, but after eating my tummy gets big. Is this normal? I think it is because I have seen and read other pregnancy blogs that have happened to them as well. I cannot wait for 3 more weeks and we get to find out the gender! What I really need to do, now that I have more energy again, is some workout. At work, I basically sit down all day and I feel like I need to get up about every hour to walk around. This makes me not so stir crazy, and helps with circulation with the baby. Occasionally I get to go out and help the other curators outside, which I like to do. At least I can keep doing it for now! What are some good workouts you have done when pregnant? I have heard yoga is good, and will definitely try that. Anything else? Spencer has been so cute, and makes me love him even more during my pregnancy. Always taking good care of me, rubbing my tummy, and giving it a kiss. I know he will be an amazing daddy come August! I was telling him yesterday how excited I am to have our baby in our arms, and that I couldn't wait another 5 months! It feels like forever, yet I know when I get closer I will probably be saying hurry up and get our baby out so I won't be uncomfortable anymore! I dunno I guess we will see. The only thing that makes me really nervous is the delivery. I haven't really read to much about the options and what all it entails, but that hospitals and needles don't mix well with me. I am definitely a give me my epidural kinda of person, I don't know if I could handle all the pain, but I don't want to see that huge needle go in my back either. EWWWW! Faint big time. I could hardly stand the doctors taking 7 viles of my blood. Ok breath..... anyways I am excited about everything else, but just worried/scared about delivery. At least science has come such a long way since a decade and they know what their doing! This past weekend, Spencer and I went down to Atlanta to stay with my brother Tristan, and his wife Erin and their son Parker. It was fun, of course I messed up with our restaurant experience. We went to try this Brazilian Steakhouse through a groupon deal and the service was kinda slow, food not that great (of course we kept comparing it to Tucanos), and even after our groupon we still had to pay $30 each. It was definitely not worth the money at all. It made me so mad how expensive it all was, on their website, don't even have the prices. Next time I am calling about the price to see how much everything is. It was still fun, just makes me want Tucanos to get our grilled pineapple and better meats!

Bascially 14 weeks Prego!

By now the announcement is basically out. Spencer and I are having a baby! We are due August 4, 2013 and couldn't be happier! You can kinda see a belly forming now, which is new this week!I am so excited to become a mother. So here is the story of everything that has been going on. I have been baby hungry for almost two years now, but waited until after Cambodia to really start thinking and trying anything. Stopped taking birth control a month left while in Cambodia and didn't want to be back on it. After that Spencer and I talked and I told him that I am ready to have a baby. So a year goes by and nothing happens/ my body was all out of wack. I won't go into to much detail because I am sure you don't want to all hear about it. It was really hard for me and I had some hard days of not being pregnant. Especially when I saw a friend or someone around me announce that they were pregnant. I just couldn't wait or take it any more, so I finally decided it's time to go see a doctor for some help. I am so glad that I did and wished I went sooner, but everything I've read said it can take some time to get pregnant and wait to go see a doctor until after a year. While we were in Utah last summer, I went to my OBGYN guy that I saw before we moved to GA. He told me we needed to run some tests and then decide from there what to do. I decided since we were only there for one more month to just get a regular checkup. I didn't want to start things, and then leave to find another doctor to continue. So we wanted until we got back, find an awesome OBGYN practice that were so kind and there for us. We went to talk to the doctor and he said it sounded like I am not ovulating since my period wasn't regular at all. Which never happened to me before I took birth control so I blame it all on that. Anyways, he prescribe me some meds to get me to ovualte and told us that it might take a few months to actually have success at getting pregnant. So I went and took the meds and then it all worked out the first time I took them! I was so happy and elated! We found out that we were pregnant about a week after Thanksgiving. The whole first month and probably the whole first trimester (I know that I am barely in the second but still) I was so scared of having a miscarriage. Well that didn't happen and everything is wonderful. I am feeling great, got really lucky and only had nausea not actual sick until Monday and yesterday. I do get headaches more frequently, but besides that I am just so happy I get to become a mom in August. I am so grateful the Lord has blessed Spencer and I with one of his children. I cannot wait to find out the gender (coming Feb. 25 our next appt. and first ultrasound!)Now all I need is some help and guidance with some things. Like what did you wear while you were pregnant. I am in the transition of not really being comfortable in my jeans, but can still basically fit. Most of my skirts don't fit anymore and I need more since I am teaching seminary. Where did you buy stuff cause we are on a tight budget, but I know I need to buy some new clothes. If you have any other advice that you really thought helpful, please do share. What I am most Thankful For!

I am thankful for many things in my life. I am especially grateful for the Gospel in my life. I am proud to be a Mormon and have the knowledge that I have today. It just keeps growing everyday as well. I am thankful for my loving husband who supports me in everything. He is always there for me to uplift and hold me up. I am thankful for my big crazy family on both sides (in-laws). I get to spend time with my in-laws next week in Chapel HIll, NC. I am so excited to see them and to have that time with them. I am grateful for my cat Tebow, he is adorable and fun to have. I am grateful for the food on my plate everyday. After being in Cambodia, I am grateful to have those small things in life. I am so blessed everyday with wonder friends and family around me. I am grateful for my friends. I know I am not the best at calling or keeping in touch with them, but I really do think about them often. All the fun memories I have in college with MAKRA..if u remember that! LOL! and many more friends. I love you all and I will call you someday soon! I love being Mrs. Spencer Malley and will always cherish our times together! I love my family and friends and my church! Happy Easter!

So I decided I wanted to make a huge, fun, delicious dinner. We had it once at my brothers family, Jesse and Alicia. Plus it was Easter type meal. I decided to make yummy lamb with homemade pitas, homemade hummus, and homemade chocolate chip cookie dough cake! Yes this cake might sound really gross, but it was probably the most delicious cake I have ever had. I had about one or two bites and looked at Spencer and his was basically gone, so I think he really LOVED it!

So on Saturday I made the yellow cake, homemade and I think I will never buy a box cake again, and put it in the freezer, and I put the chickpeas to soak over night for the hummus, I made the pita dough on Friday because the recipe said that 3 days (which I didn't have) allows the flavors to get in.

For church I tried putting curls in my hair buy twisting and wrapping about 5 different places in my hair Saturday night, with a bandanna (but I didn't have one, so I used a slip and tied the bottom). Poor Spencer, he still loved me after all of this plus on time I tried the sock bun curls (which didn't work) and had a sock in my hair. He just laughed and said your so cute! Anyways the next morning I took it all out and I totally had BIG HAIR! Spencer said it looked good, but it was all frizzy, and huge, so I just ended up tying it back. But NY& CO was having a huge sale one everything and Spencer let me buy a new dress for Easter. It is super cute and everyone at church loved it!!! But of course when I sat down on the bed before I we left the elastic broke so I had to but a belt around it because Spencer ripped up the receipt and I took of the tag so it is too late to fix, but I think it is fixable.

After church I cut off all the fat off the lamb and marinaded it for an hour and cooked it for 1 1/2 in the oven and simmered the chick peas for 1 1/2 hours. While that was cooking, I made the butter cream frosting, cooked some cookies to decorate/eat the cake with, frosted the cake, made cookie dough balls (Spencer did those) and decorated the cake. It turned out super cute I think and I couldn't wait to eat it later! Then I made the hummus, in the blender which took quite a while since it was supposed to us a food processor, but it still turned out really good.

I then had to roll out the pitas and cook those after the lamb was finished. I decorated and set the table, cut up the veggies and then called Spencer to dinner after he cut the meat for me!

Everything turned out delicious and was totally slave labor that I had to endure to get everything done that took the whole 5 hours to do because I tried to do everything right and it took me a while. But after all that effort, we sat down for dinner and ate it all in like 10 minutes. It was all so good, we stuffed ourselves to the brim. We had to wait for the cake, which was amazing, and is Spencers new fav!

After all that work, it took me forever and my feet are killing me, but it was totally worth it. I just wish we asked some people over because we have tons of food left! Just more for us for leftovers!

o and we are probably going to be in Utah this summer for two months for Spencer to do a law internship over at BYU! We won't know for sure for a few more weeks, but its looking more like we will everyday! So if your in Utah, lets Play!

Nutella Crepes!

Since Spencer and I are trying to eat better..we bought a cook book of Cook this, Not This! It has a bunch of recipes from famous restaurants of food they have and what we should cook instead...plus its all under 400 calories. So far everything we have cooked has turned out DELICIOUS!! This morning in between cleaning the house, Spencer made me some nutella banana crepes! and they were divine! I haven't even ever made crepes before..but he did a wonderful job. Even Tebow tried to eat some, o wait he always tries to eat our food. He is a crazy kitty, but full of love and joy. The recipe is below in case you want to try it!

Nutella Banana Crepes: (260 calories)

You'll Need:

Crepe Batter: (1/2 the recipe to make smaller amount)

1 cup flour

2 large eggs

2 tbsp melted butter

pinch of salt

3/4 cup low-fat milk

1/2 cup water

Combine flour, eggs, melted butter, and salt in large mixing bowl. Gradually add milk, then water, whisking to prevent any lumps

1/4 cup nutella

2 bananas peeled and sliced

confectioners sugar (optional)

heat 10" nonstick pan over medium heat. Add enough butter to coat, then add 2 tbsp crepe batter (we added more) and swirl pan to cover it in a thin, even film

cook on first side for 3-4 min until bottom takes on a deep golden brown color. Flip and slather a tablespon of nutella down middle and top with banana slices (we used 3-4 slices).

cook for 3-4 min and fold crepe sides over filling and slip onto plate. top will a shake of confectioners sugar if you like. ENJOY the GOODNESS!!

Ultimate Loser Contest!!

So Spencer and I have been doing this contest with my family. Over the Christmas break, we did some fitness activities, like I learned how to play basketball and shoot better and tennis. We have already been good on working out last semester, but we ate out too much, or too much junk food. Finally I decided enough is enough. Tristan came up with a great idea for the Ultimate Loser Contest to go down. So we all weighed ourselves (Tristan, Erin, Spencer, and Me) and decided from there where we wanted to be by March 12, which is our Lucky Leaf beach trip (Topsail Island, NC)! We also bet that whoever loses the most has to pay for our reward dinner to.......drum roll.....
PAPPASITO'S! CANTINA!!! Now Spencer and I have more motivation, then last semester, to lose weight and get back in shape. We are doing well and have been eating much healthier, which is making me feel good again! Kelsey and Pat have also come into the competition and everyone is working hard to get that dinner. I am excited and I hope that Spencer and I will win, well I know we will win. We have gone to the gym and put got our P90x on as well!! GOOD LUCK Tristy, Erin, Kels, and Pat cause our game faces are on!

TEBOW!

No I am not talking about Tim Tebow, the quarterback for the Broncos. I am talking about our new cute kitten we adopted from the Humane Society. It all started with our apartment complex having the Humane Society come and show off some of their animals. We went just to look for fun and I totally fell in love with a kitten named Raye. She was super sweet and fun to play with. Then I asked how much to buy her, they said $75. That was it, we were totally shocked and I started being really excited to talking to Spencer and we decided to get her after the holidays and wait for our grant money to go through again. A few weeks later I look online to she her picture, and low and behold, she wasn't there anymore. I emailed them right away and asked if she was still available, but she was just adopted by another family a few days before. I was so sad, and Spencer was as well because he told me he was going to surprise me with her for Christmas as a present for both of us. Then I was in search of a new pet for us to get and I found a few others kittens equally cute. He was at the Marietta Humane Society, which is where my parents live, instead in the Athens one and we went to look at a few and found Houdini. We loved him and put a hold on him so we could get him after Christmas. I couldn't wait and we picked him up a few days before Christmas, and called him Tebow. It was either naming a cat Tebow or our kid and I chose the cat of course. Spencer is truly a die hard Broncos fan. This picture does not do him justice and he is as cute as can be. He just started to warm up to my parents house, and is now all turned around again at our apartment. He is scared, happy, playful, and cute all at the same time. At least this time he didn't hide under our couch for too long. I will post more cuter pictures later!

Lok Lak Dinner!

Since Spencer has made it through his first semester and is done, I asked him to make us dinner this week. He surprised me and made Lok Lak, a delicious Cambodian dish that we have both been craving since we've been back. While in Cambodia, we had this meal at least 4 times a week. Every place we went made it different, but equally good. I was very impressed with his cooking skills because it was DIVINE!! Not the same as over there, but super, super scrumptious. It was a bit spicy, but not too spicy where you can only have a few bites. He also cleaned up our apartment, wrote a new blog on his sports website, worked out with me, and was a basic stay at home mom (husband) for me (no we are not expecting, just a funny comment Spencer told me that was what he felt like). IT was totally awesome to come home and not worry about cleaning or making dinner for us. I hope that he will make us dinner more often because he really is a wonderful cook. He also bought me some gorgeous flowers to surprise me, but didn't realize at all that they were totally fake. I saw them and thought they were pretty, and then I got up close and said, these are fake. He said "THEY ARE, OOO MAN! I can never do anything right." I thanked him and hugged him anyways for the thought, plus they will never die!

We have loved living in Athens, GA for the past few months. Spencer is doing awesome at law school and enjoying it being over for now. I like my new job at the Botanical Garden of Georgia. I am the plant recorder there, which basically makes the signs for the plant common and scientific name, and origin on it. I get to use a dark room, and it is almost the same way you would develop pictures, which is pretty cool. I also keep up all the records of all the plants on the grounds, coming in and taking out. It's very different then shoveling snow at 2 AM, but I can't complain because I it helps us pay bills. Although being at a computer all day gets really tiring, and I think I would rather shovel snow. Seems totally crazy, but I like being active and outside, which is part of the reason why I chose my major. All is well over here, we miss our friends at BYU, but are glad to not be in Utah anymore. It's beautiful weather out here, still in the 60's the past few weeks at times, and I feel like it will be a great Christmas. I am sad that my parents will be leaving us, but I do know that they will be great on their Mission and be great Mission President/ Mission Pres. Wife!

Thinking about getting a kitty, but not sure yet since I love dogs way more, Spencer is really the cat person, but we saw this super cute kitty at the Humane Society and I fell in love. She was sold unfortunately, and Spencer was going to surprise me with her for Christmas. O well, we will see if we find anything, because I am not going to get one unless I love it like I did the other kitty.

Transformers 3- 3D and Carnival

The other day we were eating at a restaurant and the TV was an. A commercial came on that showed Transformers 3 and said they had a movie cinema place called Legends Cinema at City Mall. I looked it up and low and behold they have a real copy of Transformers 3 and in 3D. Spencer and I were so excited. Last Friday we went on a date to go and see it. I got popcorn and it was divine. I have missed popcorn so much, and we got free drinks for getting our tickets. I wish it was like that in US. Anyways of course I had to go to the bathroom half way through, so I asked Spencer for a ticket in case they asked. He fumbled through his pockets and finally found one(This has a point in the story I will tell it later). Then right near the end of it when Sam saves his over the top gorgeous girlfriend, the power goes out. It was extremely sad and we should of thought of that, but I think it took about 10 minutes of it to come back on. Only in Cambodia would that happen because it goes out all the time.

I have to say it was better than the second, but the first is still the winner. So after the show we go back to our apartment, Spencer realizes he lost his keys at the theater when he was getting the ticket our for me. Good thing we asked for an extra set and I grabbed mine right before we left. It was already 12 am and the mall was closed. We just decided to wait for the next day to go back and when we did, IT WAS THERE!! We were both shocked and surprised on one had taken them. YAY!!!

Saturday night we went to the Carnival, well it really wasn't much and only had a Ferris wheel, and a boat that goes back and forth. I didn't ride the boat cause I get super sick and by the time we were ready to ride the Ferris wheel, it was closed (even though the park still had 30 minutes til close). I just don't understand why everywhere we go, they say it closes at 9 or 10 and everyone closes 30 min and an hour before that. IT was still fun. We decided to go through the shrub bush maze, and we got lost many times but found some hearts and a dinosaurs head to take pictures. I had fun, and I got some ice cream to make it even worth it. The only game they had to play was darts to pop a balloon. They had about 8 different booths of the same exact thing. I think someone needs to teach them different games so they can actually get some business.

I really don't understand why they do that because anywhere you go whether it be a pharmacy, a restaurant, a shoe/clothing store, a machine part store they have a whole block of the same exact store that sells the same exact things. How do they ever get business?

Five Guys and Hawaiian Ice of Cambodia

Spencer and I have found this amazing snow cone place that is so scrumptious and I don't know what I would do without it. I loved going to get one last summer after a long hot day of work at the Provo Temple grounds. It was so refreshing and yummy and I was sooooo sad that I wasn't going to be able to do that. Well turns out there is a place right on the corner from where we live. I LOVE IT! The lady there is actually the wife of one of our tuk tuk drivers that we usually use and they are both super nice. One day I saw a little girl getting a shave ice and I said, that is it I am going to get one too. They put some gummy type things in the bottom, you choose which ones you want or dried fruit, shaved ice, then sugar palm syrup(probably the best part), then some more shaved ice, put cherry and some other green syrup on top with a milky type syrup last. Yes it is very very sweet, but soooooooo GOOD!! I am so excited that we found this place, cause now I probably will go at least once a week.

Yesturday for FHE, we decided to go out to eat before we had our lesson to a place called Mike's Burger House. All the senior couples told us that it is like the IN-N-OUT of Cambodia! Well personally strongly disagree that In-N-Out is the best place, because it isn't. Five Guys is way better bigger burgers, more fries and have delicious seasoning and you get stuffed to the brim. Anyways, we went there and I got the classic American Bacon Cheese Burger with fries and a ROOT BEER FLOAT!! Spencer and I were extremely happy about the ROOT BEER FLOATS and I think I peed my pants a little it was like a dream come true. OF course Spencer got the Chili Double Cheese Burger with fries and ROOT BEER FLOAT!! They even use A&W root beer. It was delicious and way better than IN-N-OUT will ever be. The Cambodian who opened it up is from California, which I am sure he got the idea from In-n-out. It is finally a home away from home for me. A place that actually fills my American food delight craving. I can't wait to go back and I hope that we will soon. I was super stuffed though and I totally forgot how fating American food really is. I am actually glad that I haven't had to eaten that all summer, and I think I will be better about not eating so much fast food when we go home because it just makes you feel sick after you eat. You don't feel good about yourself like you do when you eat Asian food. It's kinda crazy how that happens, but it does. (I took the pictures after I started eating it and doesn't look as happy or appealing as it really is, but I promise you that it was the most delicious burger I have had in a really long time!!)

Pizza experience!!

This awful, plastic, fake looking pizza cost us $10. While being here on the trip, we have missed pizza and have tried to get it at a few places. Since last weekend we celebrated our Anniversary by staying at a nice hotel for 3 nights, we thought the pizza would be better the last night we stayed there. The other food they have had was amazing and all delicious. Spencer decides to order pizza the last night and get some other things for room service. First of all, the other food we ordered came and we had to sign to get the pizza to come. So we started eating the other food, anxious to see how the pizza would turn out. It finally arrives with a knock on the door, Spencer answers it and takes the pizza and puts it on the kitchen counter instead of the table we are sitting at since it is full of all the other food plates. We eat our appetizers we order and he goes to get his pizza. Low and behold is this fake, rubbery cheese pizza that is burnt in front of us. He takes the first bite and it tastes awful. Not only does the cheese bounce, but you can left up all the ingredients and see the bread part underneath in one clean lift. Of course, Spencer being still hunger, eats about 2 and a half pieces before he calls it quits. It was the most disgusting pizza I have ever seen. All I know is that we are going to be ordering pizza soon after we get back into the states.

Luckily a few days later we found another pizza place. We decide to try it because Spencer is craving a decent pizza from the last episode. It wasn't that bad and was probably the best pizza we have had here. You can tell the dough was homemade and I think the only thing they are still bad at is the sausage and the cheese. Don't worry it wasn't rubber or fake looking, they just don't know the right way to use cheese since they never use it in their own food. O well, it is still good for now and they also DELIVER!!!!!! YAY!!!!!!! I know that we will be ordering that again from our apartment next time.

Anniversary!!

I am so happy that I get to spend the rest of eternity with my one and only sweetheart. He writes me notes everyday telling me the different reasons why he loves me, tickles me to death, kisses me, hold my hand, cuddles next to me no matter where we are, tells me he loves me more then 10 times a day, comes to my rescue if I am ever hurt or need help, looks at me with dearing, caring eyes, and so much more. There is no one else I would rather spend the forever with. No one is as lucky as I am. I am proud to be called Mrs. Kaitlin Malley. I am so glad I can keep holding his hand forever just like on our wedding day. I also love to look into your eyes and I can see the love you have for me and all the happiness there is between us. I will always look at you the way I did on our happiest day ever. Our wedding day! I will love you forever Spencer. Thank you for the wonder last best two years of my life, and I look forward to the future and to grow old with you. I am yours and only yours forever. I love you!

Too much to talk about!!

There is too much to talk about and catch you up on. So I am going to just put up pictures for the past few weeks and then I will start talking about things from now on. I will try to not neglect it and get it like this again since there are so many fun adventures over here. Yesterday was Spencer and I's 2nd year anniversary!!! (and my birthday!!) It is amazing how time just flies and then it just pops up so fast. We have had a blast being married the last two years and he is the best husband and man I ever known. He takes such great care of me and is so sweet to me all the time.

He made me some pancakes for brunch during my internship break of two hours. They were sooooooo delicious and I totally miss American breakfast of waffles, o I love waffles, bacons, eggs, hashbrowns, french toast, ham, sausage, and all that yumminess! So those pancakes were to die for. I did come home to a huge bouquet of flowers, and will probably be the biggest ones I ever get, since in the US they would cost $200 or so bucks. O they are gorgeous and smell soooo good. It fills up our apartment, and I love to see them/smell them every time I walk in. Then he surprised me with a new gemstone Alexandrite necklace. It is beautiful and I was so excited to get it because I have always wanted that gemstone since it used to be my birthstone until it became to rare to get and turned pearl into my birthstone now. I love how it changes colors from purple to red to green to blue green in different lights. It's really cool and you did a great job honey!!

We went out to dinner with the other BYU students here and had ice cream cake. I got chicken fingers and fries, o I do miss Chick-fil-a or Zaxby's or chipotle. It was all soo good. I didn't think I was going to like it as much as my dad's mint chcolate chip. But it was pretty good. It had three layers of strawberry, vanilla, and chocolate ice cream with yellow cake on the bottom. YUMMMMMY!!!!

So I had a great day of being pampered and loved. We actually just celebrated my birthday mainly and are going to celebrate our anniversary for real on the weekend. Probably go to a nice hotel and we are going to get some fake cambodian wedding pictures taken. I am so excited and will definitely post them on the blog.

What I promised!!

AHHHH!! I'm so behind on my blogging and there is so much to tell. I will have to tell you in different posts because so much has happened over here and we have been so busy. So here is the crazy tree dancing story. We went to one of the host families engagement party. There son is marrying a wonderful girl. It was really interesting to see. They put all of this food out and had to put this red symbol on everything and had a ceremony that symbolized them giving away their daughter and accepting it. Kind of more like giving permission to allow their son to marry the other couples daughter. It was so much fun though. We had the ceremony and then we ate bascially all day. It was delicious food. My favorite was the fish they had. It was sooooo good and they cook their sea food way better then anyplace I have been to over in the US. They also had chicken feet and other parts of the chicken to eat, some type of salad thing with pork, vegetables, shrimp, and then they had some noodle beef dish as well.O man, I don't think I have eaten that much. Of course they all drank, and asked us many times if we wanted any and spencer politely told them we don't drink alcohol and they were all ok and fine with it. But, they were so nice and loved us being there. They showed us how to dance Cambodian style and we danced probably for 2 hours. Not straight, but going to sit and eat or drink more water or juice they gave us and then they asked us to dance some more. I loved going and seeing that experience, because Cambodian weddings are so expensive and very extravagant. They have to go and stay with the brides family, before the engagment for a period of time. Then they have to have the engagement ceremony, and it all depends on the situation, but it can take up to another year to get married. Those ceremonies, the marriage ones, last ALL DAY LONG. I mean from 7:00 am to 12 pm just partying and having fun.

I though this was really interesting as well. The men all sat outside and ate the food, while the women served them and took care of everything, while the men just drank and eat a lot. They said that since the men work all day and make the money to give to the women, its the women's job to take care of the home and cook the food. It was the men's turn to relax and just party, while the women did everything. I don't know how I feel about that, because it just seems like they women never get a chance to relax like that, but maybe they have a special women party. Spencer isn't sure, and neither and I.

We went to the national museum over here. They had beautiful statues, paintings, and different rock work that was dated back before the Angorian period. I am not sure wh en excatly that was but I know that it was pretty old. IT was fascinating to see the different avatars and vishnus they depicted. Everyone would of loved it if you were here, although it wasn't quite as gorgeous and awesome as the Metropolitan in New York, but still cool.

We then went to Wat Phnom which is an old buddist temple, they are reconstructing it, and we didn't see any buddhist there, but it was where Phnom Penh originally started. It was gorgeous there. I felt like I was in another place than the city with all the trees and flowers that surrounded the temple. There were even monkeys. They were so cute and they would come up right to you and take the food you gave them right out of your hand. We had this little guy come up to us and he took all of what Spencer had. It was like three full things of food that we were going to share together to give to other monkeys, but that little guy was a sneeke bugger and just took it all for himself. IT was soooooooo funny because one minute he was so cute and innocent and then next he just ripped it out of Spencer's hands. We laughed so hard and someone even got it on tape. We will get that later.Then we walked around and went to that museum as well and learned how Phnom Penh came about. I don't know if that was true but it was interesting. They had some village old lady see a huge tree in the river and made the villagers get it out. They then found a buddha and other four statues, can't remember what it was, in there and decided to take it up on a hill, which the hill got bigger and worshipped them and then they all evolved from there. So that was fun to see all that. They even had some small little people, barbie sized to show the different depictions and the time line of how things came about.

We then went to a TKO fight. I never thought I would ever go or see a boxing match in real life, but we went to one. IT was pretty brutal, but most of the time they were just hugging each other. Not much punching going on. It was fun, but I don't think I will ever go and see one again.

We went to a olympic stadium, they use it for soccer tournaments and for some other things I am not really sure of but there was this one Cambodian guy who squeezed through the gate just to get into the soccer game for free. It was crazy because I don't even know how he fit hes fat head through, but He was sure skinny enough to make it through. We were just walking by and saw him half way through already, and we just watched all amazed. In the end, we clapped for him and cheered. It was funny and I had no idea how he did it, but he made it through!

The Squatter

So today we went to a waterfall a little outside of Sihanoukeville. It was really fun although I got my swim trunks all dirty. I was scared at one point because we saw this Cambodian guy swimming around with goggles and and spear, trying to catch fish. The only time I have seen this before was on an episode of River Monsters, where a man in Thailand was fishing for a fish called the Snakefish, a type of fish that has been accused of killing humans. Anyway, hopefully that wasn’t the same kind of fish this guy was going for.

After swimming in the the waterfall for a little bit, we had some lunch, and as always happens after I eat, it was time to go to the bathroom. When I arrived at the outhouse, I opened the door and saw that the toilet was in the floor. I had never seen one like this before, but thought is was rather non-hygienic. But nature was calling so I decided that before proceeding I should wipe down the toilet seat with the toilet paper that I had brought in my backpack. (We bring it with us everywhere as most places don’t have any.) After wiping down the seat I sat down on the toilet with my legs in the shape of a “V”. I thought to myself, wow this position is not very conducive to the task at hand. I also wondered how people with butts smaller than mine, (basically all Cambodians) ever sit on these without falling in. Needless to say I did my business and got out of there.

It wasn’t till just a little bit ago, when I was complaining about how nasty the bathrooms were, that I learned that these were the infamous “squatters”. It all makes sense now. Of course I was the laughing stock of the group at the dinner table and the rest of the night, and probably for the foreseeable future- the man who sat on the squatter.
