What I am most Thankful For!

I am thankful for many things in my life. I am especially grateful for the Gospel in my life. I am proud to be a Mormon and have the knowledge that I have today. It just keeps growing everyday as well. I am thankful for my loving husband who supports me in everything. He is always there for me to uplift and hold me up. I am thankful for my big crazy family on both sides (in-laws). I get to spend time with my in-laws next week in Chapel HIll, NC. I am so excited to see them and to have that time with them. I am grateful for my cat Tebow, he is adorable and fun to have. I am grateful for the food on my plate everyday. After being in Cambodia, I am grateful to have those small things in life. I am so blessed everyday with wonder friends and family around me. I am grateful for my friends. I know I am not the best at calling or keeping in touch with them, but I really do think about them often. All the fun memories I have in college with MAKRA..if u remember that! LOL! and many more friends. I love you all and I will call you someday soon! I love being Mrs. Spencer Malley and will always cherish our times together! I love my family and friends and my church! Happy Easter!





So I decided I wanted to make a huge, fun, delicious dinner. We had it once at my brothers family, Jesse and Alicia. Plus it was Easter type meal. I decided to make yummy lamb with homemade pitas, homemade hummus, and homemade chocolate chip cookie dough cake! Yes this cake might sound really gross, but it was probably the most
delicious cake I have ever had. I had about one or two bites and looked at Spencer and his was basically gone, so I think he really LOVED it!

So on Saturday I made the yellow cake, homemade and I think I will never buy a box cake again, and put it in the freezer, and I put the chickpeas to soak over night for the hummus, I made the pita dough on Friday because the recipe said that 3 days (which I didn't have) allows the flavors to get in.

For church I tried putting curls in my hair buy twisting and wrapping about 5 different places in my hair Saturday night, with a bandanna (but I didn't have one, so I used a slip and tied the bottom). Poor Spencer, he still loved me after all of this plus on time I tried the sock bun curls (which didn't work) and had a sock in my hair. He just laughed and said your so cute! Anyways the next morning I took it all out and I totally had BIG HAIR! Spencer said it looked good, but it was all frizzy, and huge, so I just ended up tying it back. But NY& CO was having a huge sale one everything and Spencer let me buy a new dress for Easter. It is super cute and everyone at church loved it!!! But of course when I sat down on the bed before I we left the elastic broke so I had to but a belt around it because Spencer ripped up the receipt and I took of the tag so it is too late to fix, but I think it is fixable.

After church I cut off all the fat off the lamb and marinaded it for an hour and cooked it for 1 1/2 in the oven and simmered the chick peas for 1 1/2 hours. While that was cooking, I made the butter cream frosting, cooked some cookies to decorate/eat the cake with, frosted the cake, made cookie dough balls (Spencer did those) and decorated the cake. It turned out super cute I think and I couldn't wait to eat it later! Then I made the hummus, in the blender which took quite a while since it was supposed to us a food processor, but it still turned out really good.

I then had to roll out the pitas and cook those after the lamb was finished. I decorated and set the table, cut up the veggies and then called Spencer to dinner after he cut the meat for me!

Everything turned out delicious and was totally slave labor that I had to endure to get everything done that took the whole 5 hours to do because I tried to do everything right and it took me a while. But after all that effort, we sat down for dinner and ate it all in like 10 minutes. It was all so good, we stuffed ourselves to the brim. We had to wait for the cake, which was amazing, and is Spencers new fav!

After all that work, it took me forever and my feet are killing me, but it was totally worth it. I just wish we asked some people over because we have tons of food left! Just more for us for leftovers!

o and we are probably going to be in Utah this summer for two months for Spencer to do a law internship over at BYU! We won't know for sure for a few more weeks, but its looking more like we will everyday! So if your in Utah, lets Play!

Nutella Crepes!







Since Spencer and I are trying to eat better..we bought a cook book of Cook this, Not This! It has a bunch of recipes from famous restaurants of food they have and what we should cook instead...plus its all under 400 calories. So far everything we have cooked has turned out DELICIOUS!! This morning in between cleaning the house, Spencer made me some nutella banana crepes! and they were divine! I haven't even ever made crepes before..but he did a wonderful job. Even Tebow tried to eat some, o wait he always tries to eat our food. He is a crazy kitty, but full of love and joy. The recipe is below in case you want to try it!

Nutella Banana Crepes: (260 calories)

You'll Need:
Crepe Batter: (1/2 the recipe to make smaller amount)
1 cup flour
2 large eggs
2 tbsp melted butter
pinch of salt
3/4 cup low-fat milk
1/2 cup water
Combine flour, eggs, melted butter, and salt in large mixing bowl. Gradually add milk, then water, whisking to prevent any lumps

1/4 cup nutella
2 bananas peeled and sliced

confectioners sugar (optional)

heat 10" nonstick pan over medium heat. Add enough butter to coat, then add 2 tbsp crepe batter (we added more) and swirl pan to cover it in a thin, even film

cook on first side for 3-4 min until bottom takes on a deep golden brown color. Flip and slather a tablespon of nutella down middle and top with banana slices (we used 3-4 slices).

cook for 3-4 min and fold crepe sides over filling and slip onto plate. top will a shake of confectioners sugar if you like. ENJOY the GOODNESS!!

Super easy to make and super yummy to eat!

Ultimate Loser Contest!!


So Spencer and I have been doing this contest with my family. Over the Christmas break, we did some fitness activities, like I learned how to play basketball and shoot better and tennis. We have already been good on working out last semester, but we ate out too much, or too much junk food. Finally I decided enough is enough. Tristan came up with a great idea for the Ultimate Loser Contest to go down. So we all weighed ourselves (Tristan, Erin, Spencer, and Me) and decided from there where we wanted to be by March 12, which is our Lucky Leaf beach trip (Topsail Island, NC)! We also bet that whoever loses the most has to pay for our reward dinner to.......drum roll.....
PAPPASITO'S! CANTINA!!! Now Spencer and I have more motivation, then last semester, to lose weight and get back in shape. We are doing well and have been eating much healthier, which is making me feel good again! Kelsey and Pat have also come into the competition and everyone is working hard to get that dinner. I am excited and I hope that Spencer and I will win, well I know we will win. We have gone to the gym and put got our P90x on as well!! GOOD LUCK Tristy, Erin, Kels, and Pat cause our game faces are on!

TEBOW!

No I am not talking about Tim Tebow, the quarterback for the Broncos. I am talking about our new cute kitten we adopted from the Humane Society. It all started with our apartment complex having the Humane Society come and show off some of their animals. We went just to look for fun and I totally fell in love with a kitten named Raye. She was super sweet and fun to play with. Then I asked how much to buy her, they said $75. That was it, we were totally shocked and I started being really excited to talking to Spencer and we decided to get her after the holidays and wait for our grant money to go through again. A few weeks later I look online to she her picture, and low and behold, she wasn't there anymore. I emailed them right away and asked if she was still available, but she was just adopted by another family a few days before. I was so sad, and Spencer was as well because he told me he was going to surprise me with her for Christmas as a present for both of us. Then I was in search of a new pet for us to get and I found a few others kittens equally cute. He was at the Marietta Humane Society, which is where my parents live, instead in the Athens one and we went to look at a few and found Houdini. We loved him and put a hold on him so we could get him after Christmas. I couldn't wait and we picked him up a few days before Christmas, and called him Tebow. It was either naming a cat Tebow or our kid and I chose the cat of course. Spencer is truly a die hard Broncos fan. This picture does not do him justice and he is as cute as can be. He just started to warm up to my parents house, and is now all turned around again at our apartment. He is scared, happy, playful, and cute all at the same time. At least this time he didn't hide under our couch for too long. I will post more cuter pictures later!
